Recipe for rum flambé for eight people

Pour the contents of a bottle of Pujol rum in a clay casserole then add 50 grams of sugar, a stick of cinnamon and the peel of half a lemon.

Then set it aflame with a lighted match and stir continually with a ladle until it has been reduced to about two thirds the quantity. To put out the flames add a little coffee or cover the pot with a lid..
