MAPLE SYRUP PANCAKES
Makes 18 pancakes: 300 g of sifted flour, 1 teaspoon of freeze-dried yeast, 2 teaspoons of sugar, 1 teaspoon of table salt, 3 eggs, ½ litre of milk, 4 tablespoons of melted butter, 1/10 litre of Negrita rum, 1 bottle of maple syrup, 18 fresh butter curls.

Mix the flour, yeast, salt and sugar together in a bowl. Make a hole in the middle and pour in the milk, the beaten eggs, the melted butter and the Negrita rum. Carefully stir until thoroughly mixed. Line a small frying pan with oil and put it on a high heat. Add a small spoonful of the pancake mix and cook it on both sides. Put the pancakes on a sheet of aluminium foil to keep them warm. Serve them with a sprinkling of maple syrup and a butter curl on top.
